Bobotie (South African Meatloaf)
Fried cod is our favorite fried fish.
Recipe Summary Bobotie (South African Meatloaf)
Not your regular meatloaf! This sweet and savory loaf is enhanced with the textures of raisins and almonds and the spiciness of curry. Pleasantly different. If using high quality curry, use 1 1/2 tablespoons; most store bought curries are not as flavorful so use more. If looking for more sweetness, try adding apricot preserves or a fruit chutney.Ingredients | South African Cod Fish1 tablespoon butter2 onions, diced2 eggs1 cup milk1 cup old-fashioned oats¾ cup golden raisins¼ cup slivered almonds2 tablespoons vinegar2 tablespoons curry powder, or to taste1 tablespoon white sugar2 teaspoons salt¾ teaspoon ground turmeric¼ teaspoon ground black pepper2 pounds lean ground beef4 bay leaves, or more to taste1 egg¼ cup milkDirectionsPreheat oven to 350 degrees F (175 degrees C).
